Open late every night or only on weekends

The same Cosmo's slices and spicy ranch, in the 28th Street shop north of downtown. It keeps ordinary hours early in the week and then stretches to midnight from Thursday on, which makes it the north-side answer when the campus end of town is a hassle. Inside seating is small with a few tables outdoors, and reviewers single out the staff and how consistently huge the slices come out. Same kitchen, shorter night than the Baseline store.
Domino's Pizza (28th Street)
Nobody's idea of a night out, but at midnight on a Tuesday this store is still taking orders when most of Boulder's kitchens have shut, and it runs an hour later than that on weekends. Everything happens through the app or the phone: delivery or takeout, no dining room worth the name. The aggregate score here is the lowest on this list and reads like delivery gripes as much as food, so treat it as an hours-of-operation answer rather than a pizza recommendation.
Brooklyn Pizza
A straightforward New York slice shop on Arapahoe: whole-milk mozzarella, big foldable slices, and specialty pies like sausage and rabe sitting on the counter next to plain cheese. It is a counter operation rather than a night out, and it only stretches past ten on Friday and Saturday, so plan it as a weekend stop. It is closed Sundays, which catches people out. There is a small lot behind the building, which in this stretch of Boulder counts as a feature.
New Yorkese
New Yorkese runs the upstairs counter at Avanti F&B on Pearl Street, so you order a pie and carry it to a rooftop table looking at Pearl Street and the Flatirons. The dough is the whole argument: a blend of freshly milled spelt, rye and bread flours matured for 72 hours, chasing a Naples chew with New York crispness. One thing to plan around is that they sell whole pies rather than slices, so this is a sit-down-with-friends stop, not a grab-one-and-go one.
Pizza Hut Express (Pearl Street)
This Pearl Street location is an Express store, which means a carryout counter and nothing else: no dining room and no delivery from here. What it has going for it is an eleven o'clock close every night of the week, later than most of Boulder's sit-down pizzerias manage on a weeknight. The menu is the chain's own, pan and stuffed crust included. Very few people have rated this particular store, so read its score with that in mind.
Blackjack Pizza & Salads

The Sink
Open since 1923 and about as Boulder as a room gets: graffitied ceilings, low light, a proper bar, and a pizza that locals argue about with the burgers. It sits on the Hill a block from campus and runs an hour later on Friday and Saturday than the rest of the week. This is the entry on the list where staying out late means sitting down with a beer rather than carrying a box home. It is not cheap for pizza, and it is busiest exactly when you would want to go.
Pasta Jay's

How we researched this
The line for this list was a close of 11 PM or later on at least one night of a normal week, which is why several well-known names are missing. Pizza Colóre on Pearl Street closes at 10 PM daily by its own site, even though a downtown late-night listing still shows it open until 2:30 a.m. Backcountry Pizza & Tap House closes at 10, Abo's Pizza now shuts by 9 PM and has lost its Hill store, and Pizza 3.14 on the Hill has closed. The Gunbarrel Domino's also runs to 1 AM on weekends but was left out as a second store of a brand already here.
Closing times come from the shop's own site for Brooklyn Pizza, New Yorkese, The Sink and Pasta Jay's, and from Restaurantji's day-by-day hours for the rest, with the latest claims checked against a second source. Every rating is Restaurantji's aggregate, so the column compares like with like. New Yorkese's food hall advertises a later weeknight close than the pizzeria's own site, and we went with the pizzeria's.
